Morning Blueberry Muffins

Ingredients

I Cup whole wheat flour
2 Cups white flour
1/3 C white sugar
½ teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
1/3 cup brown sugar
Peel of one lemon
1 banana smashed
3 eggs beaten
1 1/3 cup buttermilk
½ teaspoon vanilla
½ cup butter, melted
2 cups fresh or frozen blueberries
Topping: 1 tablespoon each of sugar and cinnamon

Directions

Preheat oven to 400

Butter muffin tins. In one bowl, mix all dry ingredients including lemon peel. In a separate bowl, mix all wet ingredients. Add wet to dry and mix just enough to incorporate wet to dry. Carefully fold in blueberries. Do not over mix!

Fill muffin tins and sprinkle with cinnamon and sugar mixture. Bake at 400 for 25 min.

Makes 18 muffins. Enjoy!!
